Tomato Stuffed with Herb Cheese
|Cottage cheese||1 1⁄3 Cup (21.33 tbs)|
|Minced scallion||2 Tablespoon|
|Chopped fresh parsley||1 Tablespoon|
|Chopped fresh dill||1 Tablespoon|
|Garlic clove||1 Small, minced|
|White pepper||1 Dash|
In bowl combine cottage cheese with seallion, parsley, dill, garlic, salt, and pepper.
With pointed knife remove stem end of each tomato.
Make 4 vertical intersecting cuts through top of each tomato, almost to the base, dividing tomatoes into eighths; spread tomatoes open.
Fill center of each tomato with half of herb cheese; garnish each with 1 parsley sprig.
