Cucumber Cheese Rounds
|Cream cheese||3 Ounce|
|Finely diced peeled cucumber||1⁄2 Cup (8 tbs)|
|Grated onion||1⁄4 Teaspoon|
|Creamed butter||2 Tablespoon|
Cream the cheese until soft, then add the next 4 ingredients and mix well.
Using a 1 1/2-inch biscuit cutter, cut rounds out of slices of bread.
Spread each round with butter, then with a teaspoonful of the cheese mixture.
Garnish with a small cut-out of pimiento and a tiny leaflet of parsley.
