Sesame Cheese Crisps

Ingredients
For glaze
  Egg 1 Large
  Salt 1⁄2 Teaspoon
For crisps
  Sharp cheddar cheese 1⁄4 Pound, well chilled, shredded (4 Ounces, New York Style)
  Butter 6 Tablespoon (3/4 Stick)
  Water 3 Tablespoon
  Sesame seed 2 Tablespoon
  Dry mustard 1 Teaspoon
  Hot pepper sauce 1 Teaspoon
  Unbleached flour 1 Cup (16 tbs)
  Baking powder 1 Teaspoon
  Flour 1 Tablespoon (For Dusting)
  Sesame seed 1 Tablespoon
Directions

Preheat oven to 350°F.
Generously grease 2 baking sheets and sprinkle lightly with water.
Set aside.
Combine egg and salt for glaze.
Mix cheese, butter, water, sesame seed, mustard, hot pepper sauce and salt and blend well.
Add flour and baking powder and mix just until flour is blended in.
Wrap dough in plastic and refrigerate at least 1 hour.
Divide dough in half.
Roll 1 portion on floured board to 1/4-inch thickness and cut out 1-inch rounds.
Repeat with remaining dough.
Transfer to prepared baking sheet and apply glaze carefully with feather brush or fingers.
Sprinkle with sesame seed.
Bake until lightly browned, about 15 minutes.
