Blue Cheese Rarebit
|Danish blue cheese||8 Ounce, grated|
|Dry white wine||6 Tablespoon|
|Freshly ground black pepper||To Taste|
|Rye bread slice||16 , toasted|
Put the cheese and wine into a heavy-based saucepan and stir over a low heat until the cheese has melted. Beat the egg yolks with the milk and pepper. Off the heat, stir into the cheese mixture. Return to the heat, and cook gently, stirring constantly, until the mixture thickens. Adjust the seasoning, adding salt if necessary, and spoon onto the slices of toast. Pop them under a hot grill to glaze golden brown. Serve as soon as possible.
