Broccoli, Mushroom And Feta Cheese Salad
|Broccoli||1 Bunch (100 gm)|
|Red onion||1 , thinly sliced and separated into rings|
|Small mushrooms||1⁄4 Pound|
|Feta cheese||1⁄4 Pound, crumbled|
|Toasted sliced almonds||2 Tablespoon|
|Water||1⁄4 Cup (4 tbs)|
|Olive oil||2 Tablespoon|
|Lemon juice||2 Tablespoon|
|Garlic||1 Clove (5 gm), minced|
|Dried oregano||1⁄2 Teaspoon|
Trim broccoli. Peel stalks and cut into 1- X 1/4-inch (2.5 cm X 5 mm) strips. Cut tops into bite-size florets.
In salad bowl, toss broccoli with onion, mushrooms and cheese.
Vinaigrette: Combine water, oil, lemon juice, garlic and oregano; pour over vegetables and toss to mix. Season with salt and pepper to taste; toss again. Sprinkle almonds over top.
