Sift the flour and a little salt and pepper into a mixing bowl. Stir in the cheese, then work in the butter and milk by kneading and squeezing the butter and flour with the fingers. When the mixture has formed smooth dough, roll out to 6 mm (1/4 inch) thick on a lightly floured surface. Stamp out shapes with fancy cutters and place on a lightly greased baking sheet. Bake in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for about 15 minutes, until golden. Cool and serve piled on a plate.
