Honeyed Lemon Cheese Tartlets

|Grated lemon rind||1 Tablespoon|
|Lemon juice||4 Tablespoon|
|Baked tartlet cases||1 Dozen|
Beat eggs, combine with remaining ingredients in top of a double boiler, stir constantly over hot water until thickened.
Allow to become cold before spooning into tartlet cases.
