|Grated gruyere cheese||1⁄2 Pound (2 Cups)|
|Grated nutmeg||To Taste|
|Butter||4 Ounce (1 Cup)|
|Double heavy cream||1⁄4 Pint|
Beat the egg yolks and put into the fondue pot with the cheese, nutmeg and pepper and salt to taste.
When the cheese has melted, add the butter a little at a time and stirring continuously over gentle heat.
When the mixture thickens, add the cream.
