Fruit Topped Cheese Blintzes
|Ricotta cheese||10 Ounce (1 1/4 Cups, Sargento Old Fashioned)|
|Shredded swiss cheese||4 Ounce (Sargento Fancy Supreme, 1Cup)|
|Confectionery sugar||1⁄4 Cup (4 tbs)|
|Grated lemon rind||1 Teaspoon, grated|
|Crepes||4 Ounce (9 Inch Size, 1 Package)|
|Pears||4 Medium, cored and sliced 1/4 inch thick|
Stir together Ricotta and Swiss cheeses, confectioners sugar and lemon rind.
Separate crepes according to package directions.
Place about 2 tablespoons cheese mixture in center of each crepe.
