Cheesy Eggplant Slices
|Eggplant||1 Medium, peeled and sliced 3/4 inch thick|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Crushed cheese crackers||1⁄2 Cup (8 tbs) (Finely Crushed)|
|Mozzarella cheese slice/Swiss cheese||4 , cut in half diagonally|
Tear off four 18x18-inch pieces of heavy-duty foil.
Sprinkle eggplant slices with salt and pepper.
Dip each eggplant slice into melted butter, then into crushed cheese crackers.
Place two slices of eggplant on each square of foil.
Wrap foil loosely around eggplant, sealing edges securely.
Grill packets over medium coals about 10 minutes.
Turn and grill till eggplant is done, 6 to 7 minutes more.
Open foil and top each eggplant slice with one cheese triangle.
