Cottage Cheese Lemon Cookies
|Butter||1⁄2 Cup (8 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Eggs||2 , beaten|
|Lemon juice||2 1⁄2 Teaspoon, freshly squeezed|
|Lemon peel||2 Teaspoon, grated|
|Cottage cheese||1 Cup (16 tbs) (sieved)|
|Cake flour||2 1⁄2 Cup (40 tbs)|
|Baking powder||1 Teaspoon|
Cream butter and sugar until light and fluffy.
Add eggs, lemon juice and lemon peel.
Add cottage cheese, beating until smooth.
Combine dry ingredients; add to creamed mixture, stirring until well blended.
Drop by teaspoonsful onto greased cookie sheets.
Bake at 400° for 10 to 15 minutes, or until browned.
