Creamy Cottage Cheese Dressing
|Low fat cottage cheese||1 Cup (16 tbs)|
|Low fat buttermilk||1⁄3 Cup (5.33 tbs)|
Place ingredients in a blender or the work bowl of a food processor fitted with a metal blade.
Process on medium speed until smooth and creamy.
If a thinner consistency is desired, add more buttermilk.
Cover and refrigerate.
For each variation below, add the suggested ingredients to the basic recipe above.
CREAMY BLUE CHEESE DRESSING 1 tablespoon blue cheese and black pepper to taste.
CREAMY FRENCH DRESSING 1 teaspoon no-salt-added tomato juice, 1 teaspoon paprika, 1 tea spoon dry mustard, 1 teaspoon Worcestershire sauce, 1 teaspoon onion powder and 1 teaspoon garlic powder, or to taste.
Thin with additional no-salt-added tomato juice to the desired consistency.
CREAMY GREEN GODDESS DRESSING 3 anchovies, 1 teaspoon chopped green onion, 1 tablespoon chopped fresh parsley and tarragon to taste.
CREAMY ITALIAN DRESSING 1/2 teaspoon oregano, 1/2 teaspoon garlic powder and 1/2 teaspoon onion flakes, or to taste.
CREAMY HORSERADISH DRESSING 1 to 2 tablespoons of grated horseradish (excellent with cold roast beef).
CREAMY THOUSAND ISLAND DRESSING 2 tablespoons pickle relish or chili sauce and dry mustard to taste.
CREAMY DILL DRESSING 1/2 to 1 teaspoon dried dill weed or 1 tablespoon chopped fresh dill weed.
