|All purpose flour||5 3⁄4 Cup (92 tbs)|
|Active dry yeast||2 Tablespoon (2 Packages)|
|Sharp process american cheese||8 Ounce, shredded|
|Milk||2 Cup (32 tbs)|
In large mixer bowl combine 2 cups of the flour and the yeast.
In saucepan heat cheese, milk, sugar, shortening, and 2 teaspoons salt just till warm (115-120°), stirring constantly to melt cheese.
Add to dry mixture in mixer bowl.
Beat at low speed with electric mixer for 1/2 minute, scraping bowl.
Beat 3 minutes at high speed.
By hand, stir in enough remaining flour to make a soft dough.
Turn out onto lightly floured surface and knead till smooth and elastic (5 to 8 minutes).
Shape into a ball.
Place in lightly greased bowl, turning once.
Cover and let rise in warm place till double (45 to 60 minutes).
Punch down; turn out on lightly floured surface.
Divide in half.
Cover and let rest 10 minutes.
Shape into 2 loaves and place in two greased 8 1/2 x 4 1/2 x 2 1/2-inch or 9x5x3-inch loaf pans.
Cover and let rise in warm place till double (30 to 45 minutes).
Bake at 375° till done, 30 to 35 minutes.
Remove from pans and cool on wire racks.
