Herbed Almond Cheese

Ingredients
For almond cheese
  Raw almonds 2 Cup (32 tbs), soaked 24-48 hours, peels removed
  Water 1 Cup (16 tbs)
  Probiotic powder 1⁄4 Teaspoon
Herbed almond cheese
  Almond cheese 2 Cup (32 tbs)
  Pine nuts 2 Tablespoon, chopped finely
  Red onion 2 Tablespoon, finely minced
  Fresh parsley 1 Tablespoon
  Light mellow miso 2 Teaspoon
  Green onion 1 Teaspoon, finely minced
  Nutritional yeast 1 Teaspoon (Optional)
  Garlic 1 Teaspoon, crushed
  Pepper 1 Pinch
Directions

FOR MAKING ALMOND CHEESE
MAKING
1. In a food processor, combine almond, water and probiotic powder.
2. Strain it with cheese cloth and put a heavy plate on it to drain excess liquid from it. Ferment it for 8-12 hours.

SERVING
3. Use it in making herbed almond cheese.

FOR MAKING HERBED ALMOND CHEESE
MAKING
1. In a bowl, combine almond cheese, pine nuts, red onion, fresh parsley, miso, green onion, nutritional yeast, garlic and pepper.

SERVING
2. Serve as a snack.
