Cottage Cheese Pudding
|Goats milk cottage cheese/Cottage cheese||2 Cup (32 tbs)|
|Butter||2 Tablespoon (for greasing)|
|Pumpkin/Squash pulp||2 Cup (32 tbs) (Well Drained Fresh Frozen Thawed / Canned)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Grated nutmeg||1⁄4 Teaspoon|
1. Preheat the oven to 350 degrees.
2. Put all the ingredients, with the exception of the nutmeg, in the container of an electric blender or food processor and blend or process until smooth.
3. Pour into six buttered or oiled custard cups. Sprinkle with nutmeg if desired. Place cups in a pan of hot water and bake until pudding is firm or until a silver knife inserted comes out clean, about 35 to 40 minutes. Cool and chill.
