Cucumber Cheese Mould

Ingredients
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Cold water 1 1⁄4 Cup (20 tbs)
  Instant chicken bouillon granules 1 1⁄2 Teaspoon
  Lemon juice 2 Teaspoon
  Prepared horseradish 1 Teaspoon
  Dry cottage cheese 1 1⁄2 Cup (24 tbs)
  Cucumber 1 Large, peeled, seeded, and shredded
  Chopped green onion 2 Tablespoon
Directions

In small saucepan soften gelatin in cold water; add bouillon granules.
Stir over low heat till gelatin is dissolved; cool, Stir in lemon juice and horseradish.
Add cottage cheese, shredded cucumber, and chopped green onion.
Turn into a 4 cup mold.
Chill till firm.
Unmold onto lettuce-lined plate and garnish with cucumber slices, if desired,
