Cream Cheese Cookies
|Butter/Margarine||3⁄4 Cup (12 tbs), softened|
|Cream cheese||3 Ounce, softened (1 Package)|
|Vanilla extract||1 Teaspoon|
|Lemon juice||1 Tablespoon|
|Grated lemon rind||2 Teaspoon|
|Cake flour/1 3/4 cups all-purpose flour||2 Cup (32 tbs)|
|Minced pecans||1 Cup (16 tbs)|
|Powdered sugar||1 Tablespoon (C & H)|
Preheat oven to 300°F.
Gradually beat 1 cup powdered sugar into butter and cream cheese until light and fluffy.
Stir in vanilla, lemon juice, and rind.
Mix in flour, then stir in nuts.
Push off teaspoon onto ungreased cookie sheet.
Bake 20 to 25 minutes, or until lightly browned.
While hot, coat with powdered sugar.
Cool on rack.
