Blue Cheese Crisps
|Blue cheese||4 Ounce (1 Package)|
|Soft butter/Margarine||1⁄2 Cup (8 tbs)|
|Egg||1 , separated|
|All-purpose flour||1 Cup (16 tbs), unsifted|
Beat together cheese, butter, egg yolk, and milk or cream until smooth.
Stir flour into creamed mixture.
Turn out on a lightly floured board and knead just until blended, about 5 turns.
Divide dough in half, form each half into a ball, wrap in wax paper, and chill.
When dough is firm, roll out one ball at a time on a lightly floured board to a circle about 12 inches in diameter and 1/8 inch thick.
Cut into 12 wedges and place on a lightly greased baking sheet.
Brush each triangle with slightly beaten egg white and sprinkle lightly with paprika.
Repeat for second ball of dough.
Bake in a 400° oven about 10 minutes or until crisp and lightly browned.
