Homemade Maple Yogurt Cheese

Yoghourt, or yogourt, or yogurt... anyway you spell it, it's a very versatile ingredient for cooking. This isn't a recipe as much as a way to show you a method of creating something great. A word or two about yoghourt (I'll try not to rant), it really should have only two ingredients - Milk and Bacteria. Any more than that and the manufacturer is hiding something... Now I realise most people like it a little sweet, and with fruit, but make sure that when you cook with yoghourt it's unsweetend, and doesn't contain guar gum, or xantham gum, or gelatine etc; these just get in the way
  Plain yogurt 2 Cup (32 tbs)
  Maple syrup 6 Tablespoon

Thoroughly mix maple syrup and yoghourt.
Place mixture in cheesecloth 4 layers thick.
Suspend cheesecloth over a bowl - either in a sieve or tied and hanging - for 2-3 days.

The variations are endless, really endless. This is sweet but you can do savoury, and really all it takes is your imagination + a little trial and error. Even the most calamitous failure will deliver tasty results.
