Arugula Salad With Mango And Blue Cheese
|Arugula||4 Bunch (400 gm), torn|
|Crumbled blue cheese||4 Ounce (1/2 Cup)|
|Ripe mango||1 , peeled and diced|
|Dry roasted sunflower seeds||1⁄2 Cup (8 tbs), salted, if desired|
|Lime||1 , zest finely grated and lime then juiced|
|Rice vinegar||3 Tablespoon|
|Olive oil||5 Tablespoon|
1. Combine arugula, blue cheese, and diced mango in a bowl. Add salt and pepper to taste. Toss.
2. Whisk together dressing ingredients. Dress and garnish servings with a generous handful of sunflower seeds.
