Arugula Salad With Mango And Blue Cheese

Ingredients
  Arugula 4 Bunch (400 gm), torn
  Crumbled blue cheese 4 Ounce (1/2 Cup)
  Ripe mango 1 , peeled and diced
  Dry roasted sunflower seeds 1⁄2 Cup (8 tbs), salted, if desired
  Lime 1 , zest finely grated and lime then juiced
  Rice vinegar 3 Tablespoon
  Olive oil 5 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

1. Combine arugula, blue cheese, and diced mango in a bowl. Add salt and pepper to taste. Toss.
2. Whisk together dressing ingredients. Dress and garnish servings with a generous handful of sunflower seeds.
