Crispy Cheese Bites

Ingredients
  Butter 150 Gram, softened (1/2 Cup Plus 2 Tablespoon)
  Shredded gruyere cheese/Emmenthal 180 Gram (1 1/2 Cup)
  Half and half 125 Milliliter (1/2 Cup)
  Salt 1⁄2 Teaspoon
  Paprika 1 Teaspoon
  Baking powder 1⁄2 Teaspoon
  All purpose flour 250 Gram (1 2/3 Cup)
  Egg yolk 1 , beaten
  Poppy seeds 1⁄2 Teaspoon (To Sprinkle)
  Sesame seeds 1⁄2 Teaspoon (To Sprinkle)
  Caraway seed 1⁄2 Teaspoon (To Sprinkle)
  Chopped pistachios 1⁄2 Teaspoon (To Sprinkle)
  Blanched almonds 1⁄2 Teaspoon (To Sprinkle)
Directions

Beat butter and cheese in a large bowl.
Stir in half-and-half, salt and paprika.
Sift baking powder with flour; stir into mixture.
Knead lightly to make a smooth dough.
Divide dough into 2 or 3 pieces; wrap in foil or plastic wrap.
Refrigerate 30 minutes.
Preheat oven to 400°F (205°C).
Grease baking sheets.
On a floured surface, roll out pieces of dough, about 1/4 inch (5 mm) thick.
Cut dough into rings, hearts, half-moons or stars.
Place on greased baking sheets.
Brush with egg yolk and while still moist, sprinkle with poppy seeds, sesame seeds, caraway seeds or chopped pistachios, or top with an almond.
Bake 10 to 15 minutes or until golden.
Remove carefully from baking sheet with a spatula.
Cool slightly on a rack.
