|Dry cottage cheese||1 Cup (16 tbs)|
|Granulated sugar replacement||2 Teaspoon|
|Vanilla extract||1⁄2 Teaspoon|
|Lemon rind||1⁄2 Teaspoon, grated|
|Butter||1⁄4 Cup (4 tbs), melted|
|Egg white||1 , slightly beaten|
|Powdered sugar replacement||4 Teaspoon|
Combine cottage cheese, granulated sugar replacement, vanilla, lemon rind and the whole egg in bowl.
Stir to completely blend.
Cut each phyllo leaf into three pieces and fold each piece in half.
Combine melted butter and slightly beaten egg white in cup, beating with fork to blend.
Brush each folded phyllo piece lightly with butter mixture.
Place heaping 1 tsp (15 mL) of cheese mixture in center of each piece, and fold phyllo leaves into triangular shape.
Lightly brush top of triangle with butter mixture, and place on lightly greased cookie sheets.
Bake at 350°F (175°C) for 10 to 12 minutes, or until lightly browned.
Remove to cooling rack; cool.
Combine powdered sugar replacement and cinnamon in cup, stir to mix, and sprinkle over triangles.
