Ingredients
  Unflavored gelatin 2 Tablespoon (2 Envelopes)
  Cold water 1 Cup (16 tbs)
  Double strength coffee 1 Cup (16 tbs)
  Pot cheese/Low-fat cottage cheese 1 Pound
  Vanilla extract 1 Teaspoon
  Sugar 1⁄4 Cup (4 tbs)
  Bay leaves 2 , broken in half
  Mint leaves/Watercress leaves 3
Directions

1. Sprinkle gelatin over cold water in a small skillet; let stand 5 minutes. Heat, stirring occasionally, over low heat until dissolved Pour gelatin mixture into a food processor or blender; add remaining ingredients except bay leaves and mint. Puree mixture.
2. Spoon mixture into a 1-quart mold. Push bay leaf pieces into mixture. Refrigerate covered 4 to 6 hours; unmold. Garnish with mint.
