Molded Cheese Dessert
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Cold water||1 Cup (16 tbs)|
|Double strength coffee||1 Cup (16 tbs)|
|Pot cheese/Low-fat cottage cheese||1 Pound|
|Vanilla extract||1 Teaspoon|
|Sugar||1⁄4 Cup (4 tbs)|
|Bay leaves||2 , broken in half|
|Mint leaves/Watercress leaves||3|
1. Sprinkle gelatin over cold water in a small skillet; let stand 5 minutes. Heat, stirring occasionally, over low heat until dissolved Pour gelatin mixture into a food processor or blender; add remaining ingredients except bay leaves and mint. Puree mixture.
2. Spoon mixture into a 1-quart mold. Push bay leaf pieces into mixture. Refrigerate covered 4 to 6 hours; unmold. Garnish with mint.
