|Buttered white bread slice squares||6 Large|
|Cream cheese||6 Ounce|
|Butter||1 Tablespoon (1 Knob)|
|Buttered brown bread slice squares||3 Large|
|Gherkin/Spring onion||1 Small|
Slice the tomatoes and cucumber thinly and season well.
Heat the knob of butter, beat and season the eggs and scramble lightly, adding the chopped ham.
Spread 3 of the slices of white bread and butter with the ham and egg mixture, cover with the brown slice.
Top this with the sliced tomatoes and cucumber, then the other white slices.
Beat the cream cheese until it is very soft, if necessary add a few drops of milk.
Cut each of the 3 large sandwich squares into 4 triangles€”making 12 in all.
Coat top and sides with thin cheese, rather like icing little cakes.
Garnish on top with the slices of olive and leaves of gherkins or spring onions.
