Three Cheese Timbales
|Milk||1 1⁄2 Cup (24 tbs)|
|Dry mustard||1⁄4 Teaspoon|
|Red pepper||1 Pinch|
|Ricotta cheese||1⁄4 Cup (4 tbs)|
|Grated romano cheese||1⁄2 Cup (8 tbs)|
|Shredded gruyere cheese||1⁄2 Cup (8 tbs)|
|Breadcrumbs||1 Cup (16 tbs)|
Combine milk, eggs, and seasonings; beat at medium speed of an electric mixer until light and lemon colored.
Stir in cheeses.
Butter 6 (6 ounce) ramekins; coat with breadcrumbs.
Spoon mixture evenly into each.
Place in a 13 x 9 x 2 inch pan; add hot water to depth of 1 inch in pan.
Bake at 350° for 45 to 50 minutes or until browned.
Sprinkle with paprika.
