Blue Cheese Fruit Cups
|Canned fruit cocktail||16 Ounce (1 Can)|
|Unflavored gelatin||2 Tablespoon (2 Envelopes)|
|Orange juice||2 Cup (32 tbs)|
|Cream cheese||3 Ounce, cubed and softened (1 Package)|
|Mayonnaise/Salad dressing||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Blue cheese||1 Ounce, crumbled|
|Broken pecans||1⁄2 Cup (8 tbs)|
Drain fruit cocktail, reserving 1 cup syrup.
Soften gelatin in half the reserved syrup.
Heat orange juice just to boiling and add to softened gelatin, stirring till gelatin dissolves.
Slowly add hot mixture to cream cheese, beating with rotary beater till smooth.
Add remaining reserved fruit syrup, mayonnaise, lemon juice, sugar, and dash salt.
Beat gelatin mixture again till smooth.
Chill till partially set.
Stir in drained fruit cocktail, blue cheese, and nuts.
Spoon into ten 1/2 cup molds.
Chill till firm.
