Lemon Cream Cheese
|Caster sugar||2 Ounce|
|Curd/Cream cheese||2 Pound|
|Double cream||1⁄4 Pint|
|Lemon slices||4 (Fresh)|
|Pistachio nuts||1⁄4 Cup (4 tbs) (Few Required)|
Squeeze out the juice from both lemons and put in an electric blender with the sugar and cheese and blend well.
Pour in the double cream and blend until just mixed.
Divide the mixture between four individual glasses or cups and chill for several hours.
It is best eaten the day that it is made and served decorated with a twisted slice of fresh lemon and sprinkling of pistachio nuts.
