Creamy Cottage Cheese Sandwich
|Low fat dry curd cottage cheese||1 1⁄2 Cup (24 tbs)|
|Nonfat dry milk||1 1⁄2 Teaspoon|
|Lemon juice||1 Teaspoon|
|Mushrooms||1⁄2 Cup (8 tbs), chopped|
|Onion||1 Teaspoon, chopped|
|Carrot||1⁄3 Cup (5.33 tbs), chopped|
|Celery||1⁄4 Cup (4 tbs), chopped|
|Garlic powder||1 Dash|
|Worcestershire sauce||1 Dash|
1. Place the cottage cheese, nonfat dry milk, water, and lemon juice in a blender and blend until smooth.
2. Scrape out of blender and add vegetables, garlic powder, and Worcestershire sauce.
3. Spread 1/2 cup of mixture on 2 slices of whole wheat bread to make a sandwich. Experiment with other breads such as rye or pumpernickel. This is delicious with lettuce and tomatoes, too. Enjoy
