Creamed Blue Cheese
|Blue cheese||6 Ounce, crumbled|
|Butter||3⁄4 Cup (12 tbs)|
|White pepper||1⁄8 Teaspoon|
|Ground pistachio nuts||1 Tablespoon|
Cream blue cheese until light and smooth.
Cream butter in a separate bowl until fluffy.
Combine cheese and butter; blend well.
Add pepper; mix thoroughly.
Line small, decorative mold with about 3 thicknesses of cheesecloth, leaving enough over rim to bring over top.
Press cheese mixture firmly into mold; bring corners of cheesecloth up over top.
Store in refrigerator overnight.
Grasp corners of cheesecloth; lift cheese mixture out of mold.
Turn into serving dish.
Sprinkle pistachio nuts thickly over top.
Let set at room temperature to soften.
