Heat orange juice.
Combine flour, sugar, salt, and mustard; stir to blend.
Add to hot juice, and cook and stir until mixture thickens.
Remove from heat and blend in the 1/2 teaspoon orange rind and vinegar.
Cool; stir in mayonnaise and milk.
Place each peach half on lettuce leaf.
Combine cottage cheese, dates, almonds, and the 1 tablespoon orange rind.
Mound this mixture on peach halves, and top with sauce.
