Cottage Cheese Salad
|Cubed paneer||2 Cup (32 tbs)|
|Orange segments||1 , skinned|
|Cubed apple||1⁄4 Cup (4 tbs) (With Skin)|
|Preserved ginger||1 Teaspoon, finely julienned|
|Chili powder||1⁄4 Teaspoon|
|Lime juice||1 Teaspoon|
|Cubed bread||1⁄4 Cup (4 tbs), fried crisp|
Toss all the above ingredients together except bread cubes.
Toss bread cubes in right at the last minute, or they will get soggy.
Place 1 tsp of the salad mixture on each lettuce leaf (cup) and serve garnished with a swirl of 1 tsp of mayonnaise on the top.
(Julienne in this book means strips cut out like matchsticks.
It can also mean (but not in this book) a clear vegetable soup which was first made by an 18th Century French chef named Jean Julien.)
