Shrimp Ceviche - Cooking In Manhattan With Serena

During a recent trip to Ecuador I have discovered this great recipe for shrimp ceviche that is delicious and SAFE because the seafood is cooked beforehand.
Ingredients
  Orange juice 2 Cup (32 tbs)
  Shrimps 2 Cup (32 tbs), boiled in water with salt
  Cooking liquid 1 Cup (16 tbs), reserved
  Lemon juice 1 Cup (16 tbs)
  Cilantro 1 Cup (16 tbs), finely chopped
  Shallot 1 Cup (16 tbs), finely chopped and soaked in salt water ((or less to taste))
  Salt 1 Pinch ((to taste))
  Ketchup 1 Cup (16 tbs)
Directions

MAKING
1. In a large bowl, take ketchup, lime juice, orange juice, cilantro, shallots, reserved cooking liquid; stir to mix.
2. Taste and add salt to taste.
3. Add the shrimps and let marinate in refrigerator for 1 hour.

SERVING
4. Serve the ceviche in a bowl along with some of the liquids and top with a handful of popcorn just before serving.
