This mahi mahi ceviche is such a vibrant, fresh and light appetizer with lively flavors. It’s an all round winner and perfect for summer. Chef John uses non-traditional ingredients like orange segments, radishes and chives. Though this dish requires a little bit of knife work, when you consider the seasonal advantage of not using the stove, and how tasty it is, it's definitely worthwhile all the effort. It definitely taste best when chilled and served with chips.
