|Fresh scallops/Mild flavored fish such as sole / halibut||1 1⁄2 Pound|
|Lemons||3 , juiced|
|Red onion||1 Medium, chopped|
|Chopped cilantro||1⁄4 Cup (4 tbs)|
|Sweet red pepper||1 , finely chopped|
|Green pepper||1 , finely chopped|
|Tomatoes||2 , peeled, seeded and diced|
|Scallions||3 , chopped|
|Olive oil||1⁄4 Cup (4 tbs)|
Cut the fish into small pieces.
Place it in a glass bowl along with the lime and lemon juice.
Refrigerate at least 6 hours or until the fish becomes opaque.
Add the remaining ingredients and refrigerate at least another hour to blend the flavors.
Serve with tortilla chips.
