Ceviche is a very popular salad recipe in Latin American countries.Essentially made with raw seafood & marinaded with lemon juice or any other citrus fruit.
Ingredients
  Shrimp 2 Pound, cut in bite size pieces (Peeled And Deveined)
  Scallops 1 1⁄2 Pound
  White fish/Orange roughly or halibut 1 1⁄2 Pound (Choose Firm)
  Firm white fish/Orange roughy or halibut 1 1⁄2 Pound
  Limes 6 Tablespoon
  Green onions and tops 1 Bunch (100 gm), minced
  Salad oil 1⁄2 Cup (8 tbs)
  Chopped parsley 1⁄2 Cup (8 tbs)
  Oregano 1⁄2 Teaspoon
  Tomatoes 3 Large, chopped (Peeled Seeded)
  Green olives 2 (For Garnishing)
  Salt To Taste
  Pepper To Taste
Directions

Cut raw fish into bite size pieces and place in deep dish and cover with lime juice.Refrigerate for at least 8 hours or overnight. Then add all remaining ingredients.Keep it in the fridge till the time you serve it.Drain the liquid,garnish with green olives & serve with tortilla chips.
