|Sole fillet/Similar fish||1 Pound, cut into bite size pieces|
|Lime juice||1⁄4 Cup (4 tbs)|
|Tomato||1 Large, peeled, seeded and diced|
|Red onion||1 Large, coarsely chopped|
|Canned chopped jalapeno peppers||4 Ounce (2 Cans, 2 Ounce Each)|
|Olive oil||1⁄4 Cup (4 tbs)|
|Minced fresh parsley||1⁄4 Cup (4 tbs)|
|Freshly ground pepper||To Taste|
Sprinkle fish with lime juice and marinate in refrigerator for 8 to 12 hours or overnight, turning occasionally.
Drain and reserve juice.
Combine fish with all remaining ingredients and sprinkle with reserved juice.
