Seafood Ceviche

Ingredients
  Sole fillet/Similar fish 1 Pound, cut into bite size pieces
  Lime juice 1⁄4 Cup (4 tbs)
  Tomato 1 Large, peeled, seeded and diced
  Red onion 1 Large, coarsely chopped
  Canned chopped jalapeno peppers 4 Ounce (2 Cans, 2 Ounce Each)
  Olive oil 1⁄4 Cup (4 tbs)
  Minced fresh parsley 1⁄4 Cup (4 tbs)
  Freshly ground pepper To Taste
  Salt To Taste
Directions

Sprinkle fish with lime juice and marinate in refrigerator for 8 to 12 hours or overnight, turning occasionally.
Drain and reserve juice.
Combine fish with all remaining ingredients and sprinkle with reserved juice.
Serve chilled.
