|Vegetable oil||1 Teaspoon|
|Bulgur wheat/Cracked wheat||1 Cup (16 tbs), uncooked|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Chopped green onions||1⁄2 Cup (8 tbs)|
|Sliced fresh mushrooms||1⁄2 Cup (8 tbs)|
|Canned no salt added whole tomatoes||29 Ounce, untrained and chopped (2Cans, 14 1/2 Ounces Each)|
|Canned black beans||15 Ounce, drained (1 Can)|
|Canned chopped green chiles||4 Ounce, drained (1 Can)|
|Ground cumin||1 Teaspoon|
|Chili powder||1 Teaspoon|
Coat a large nonstick skillet with cooking spray; add oil.
Place over medium-high heat until hot.
Add bulgur and next 3 ingredients; saute 5 minutes.
Add tomato and remaining ingredients; bring to a boil.
Cover, reduce heat, and simmer 15 minutes or until bulgur is tender and liquid is absorbed.
