Spicy Bulgur

Ingredients
  Vegetable cooking spray 1
  Vegetable oil 1 Teaspoon
  Bulgur wheat/Cracked wheat 1 Cup (16 tbs), uncooked
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Chopped green onions 1⁄2 Cup (8 tbs)
  Sliced fresh mushrooms 1⁄2 Cup (8 tbs)
  Canned no salt added whole tomatoes 29 Ounce, untrained and chopped (2Cans, 14 1/2 Ounces Each)
  Canned black beans 15 Ounce, drained (1 Can)
  Canned chopped green chiles 4 Ounce, drained (1 Can)
  Ground cumin 1 Teaspoon
  Chili powder 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Salt 1⁄4 Teaspoon
Directions

Coat a large nonstick skillet with cooking spray; add oil.
Place over medium-high heat until hot.
Add bulgur and next 3 ingredients; saute 5 minutes.
Add tomato and remaining ingredients; bring to a boil.
Cover, reduce heat, and simmer 15 minutes or until bulgur is tender and liquid is absorbed.
