1. Spread the wheat grains on a pan and place under a broiler set at 400 degrees. Toast until the grain smells toasted. Do not allow to burn.
2. Grind the toasted grains in a coffee mill or Moulinex grinder and discard any floury residue.
3. Put 1 cup cracked toasted wheat in a saucepan with the water and salt. Heat, stirring, until the mixture boils. Reduce the heat and cook slowly, stirring occasionally, until tender, about 40 minutes. Alternately, the mixture can be cooked in the top of a double boiler over boiling water for 1 hour.
