Eggplant Caviar

Ingredients
  Eggplant 1 Large
  Olive oil/Other oil of your choice 125 Milliliter
  Onion 1 Medium
  Green pepper 1
  Garlic clove 1 Large
  Salt 2 Milliliter
  Pepper 1 Milliliter
  White vermouth/Wine 30 Milliliter
  Wine vinegar 15 Milliliter
Directions

Wash the whole eggplant, wipe dry.
Place on a microwave-safe rack.
Microwave at MEDIUM-HIGH between 15 and 20 minutes.
Let stand 15 minutes, then peel and chop into small dice.
Place the oil in a microwave-safe dish.
Add the onion, green pepper and garlic.
Stir until well mixed.
Microwave at HIGH 6 to 7 minutes, stirring after 4 minutes of cooking.
Add the remaining ingredients and the eggplant.
Stir until well mixed.
Microwave at HIGH 5 to 6 minutes or until mixture starts to thicken.
Stir thoroughly.
Pour into a nice bowl, cool, cover and refrigerate until ready to serve.
Serve as a dip with any vegetables or mild cheese sticks.
