Aubergine Caviar

Ingredients
  Aubergines 2 Large, grilled till charred, peeled and coarsely chopped
  Garlic 3 Clove (15 gm), peeled and crushed
  Tahini paste 1⁄4 Pint (150 milliliter)
  Lemon 3 , freshly juiced
  Salt 1⁄2 Teaspoon
  Pepper To Taste
  Coriander leaves 1 Tablespoon
  Black olives 1 Tablespoon
  Lemon wedges 4
  Pita bread 6 (warm)
Directions

MAKING
1. In an electric mixer, combine aubergine, garlic, half quantity tahina and half quantity lemon juice. Blend till smooth.
2. Add remaining lemon juice, salt, pepper and tahina and blend once more.
3. Remove on to a serving bowl and cling wrap. Refrigerate.

SERVING
4. Garnish with olives and coriander leaves and serve with warm pita bread and lemon wedges.
