Eggplant Caviar

Ingredients
  Eggplant 1
  Yellow onion 1 Large
  Garlic 1 Clove (5 gm)
  Tomatoes 2 Large
  Olive oil 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Pepper To Taste
  Sugar 1⁄2 Teaspoon
Directions

Wash eggplant and bake in moderate oven (375°F.) until outside is black and inside soft, about 45 minutes.
Run cold water over it.
Peel carefully and dice.
Peel onion, garlic, and tomatoes; chop well.
Mix with eggplant.
Add remaining ingredients; mix thoroughly.
Chill well
