|Yellow onion||1 Large|
|Garlic||1 Clove (5 gm)|
|Olive oil||1⁄2 Cup (8 tbs)|
Wash eggplant and bake in moderate oven (375Â°F.) until outside is black and inside soft, about 45 minutes.
Run cold water over it.
Peel carefully and dice.
Peel onion, garlic, and tomatoes; chop well.
Mix with eggplant.
Add remaining ingredients; mix thoroughly.
