Dill Fried Cauliflower
|Bread crumbs||1⁄2 Cup (8 tbs), mixed with 1 teaspoon salt|
|Dill weed||1 Teaspoon|
|Eggs||2 , beaten|
|Oil/Rendered chicken fat||4 Tablespoon|
Cook cauliflower in salted water just 10 minutes; drain.
Cool; separate into florets.
Dip each piece into crumbs, then in eggs; return to crumb mixture.
Heat oil in medium skillet; cook florets until golden brown.
Drain on paper towels; sprinkle with more salt and pepper if desired.
