Wash the cauliflower, cut off the hard stalk at the base and any tough outer leaves.
Place the cauliflower upright in a pan with 1 inch of boiling salted water.
Add the bay leaf and grate generously with nutmeg all over the top.
Cover the pan with a lid and simmer for 8-10 minutes or until the cauliflower is cooked but still firm (test this with a skewer).
Drain well and melt the butter over the top.
Season with pepper.
