Cauliflower In Vinegar
|Black pepper||1 , freshly ground|
|Vinegar||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Garlic||1 Clove (5 gm), cut in half|
|Dried basil||2 Teaspoon|
|Olive oil||3 Tablespoon|
|Lemon juice||1 Tablespoon|
|Parsley||1 Teaspoon, chopped|
|Chives||1 Teaspoon, chopped|
1 Wash and trim the cauliflower and divide into florets or sprigs. Add to boiling salted water and cook for 10-15 minutes. Drain.
2 Bring the vinegar, water, garlic and basil to a boil and pour over the cauliflower. Leave until cold, then chill.
3 Mix the oil, lime or lemon juice, parsley, chives, salt and black pepper to make a smooth dressing. Drain the cauliflower, pour on the dressing and serve at once.
