Kidney With Spring Onions (Scallions) And Cauliflower
|Oil/Melted lard||2 Tablespoon|
|Soy sauce||1 Tablespoon|
|Brown sugar||1 Teaspoon|
Wash and core the kidneys, slice them quickly, and soak in the sherry.
Break the cauliflower into very small florets.
Cook in salted boiling water for 3 minutes.
Cut the spring onions (scallions) into 1 inch lengths.
Melt the lard and fry the kidneys and onions with the cauliflower for 2 minutes.
Mix the cornflour (cornstarch) to a smooth paste with the soy sauce, 2 tablespoons water, the sugar, the remaining sherry and the salt.
Add to the pan and cook gently for 3 minutes, stirring all the time.
