Lemon-Buttered Leek And Cauliflower
|Cauliflower flowerets||2 Cup (32 tbs)|
|Butter||1 Tablespoon (or margarine)|
|Lemon juice||1 Tablespoon|
Cut green tops from leek to within 2 inches of white portion.
Remove 1 or 2 layers of outer skin.
Wash, drain, and thinly bias-slice the leek.
Cut an 18x12-inch piece of heavy foil.
Place cauliflower and sliced leek in center of foil.
Dot with butter.
Drizzle with honey and sprinkle with salt and pepper.
Bring up 2 opposite edges of foil and, leaving a little space for expansion of steam, tightly seal top, then each end.
Place foil packet in center of the cooking grill.
Grill 20 to 25 minutes or till cauliflower and leek are tender.
just before serving, drizzle with lemon juice and gently stir.
