This is a simple recipe you can make to replace starchy and fattening mashed potatoes! This can also be made raw and you may use a food processor if you don't have a vitamix blender. Enjoy!
1 , washed and cut into pieces
Coconut milk/Almond milk
1 Cup (16 tbs), unsweetened
2 Tablespoon (hemp oil or flax oil can also be used)
Non vegan options
1 Cup (16 tbs)
1. In a large pan, add the cauliflower pieces along with water just enough to cover the cauliflower florets.
2. Steam the cauliflower for a few minutes and turn off the stove.
3. In the vitamix or food processor, add the steamed cauliflower, coconut milk, sea salt, garlic, pepper and olive oil. Blend well.
4. Transfer to a serving dish and serve fresh.
If you want to make a non vegan version of this recipe, you can add Parmesan cheese and Greek yogurt for added flavor.
