Cream Of Cauliflower

A rich yummy seasonal soup
Ingredients
  Cauliflower 200 Gram
  Olive oil 1 Teaspoon
  Lemon 60 Milliliter
  Celery 60 Gram
  Lime 10 Gram
  Onion 60 Gram
  Leek 60 Gram
  Vegetable stock 1200 Milliliter
  Flour 100 Gram
  Butter 100 Gram
  Salt 10 Gram
  Pepper 7 Gram
  Cream 60 Milliliter
  Coriander 30 Gram
  Sugar 10 Gram
Directions

Melt butter and put olive oil in that.
Sweat the mirepoix and the cauliflower in that and then add the vegetable stock in the same.
Add coriander roots also in that and bring it to boil, season in the mean time.
Once the vegetables are cooked then puree the same.
Put the soup back on fire and simmer, finish with cream and adjust the seasoning after checking.
Garnish with fresh cream and sprig of parsely

In both the recipe and printable version there is no indication of what to do with the flour. I assume it to be added to the vegetables and fried before the stock is added. were a novice to read it this might be a confusing recipe
