Roasted Cauliflower With Cheddar
|Cauliflower head||1 , cut into small florets|
|Vegetable oil||1 Tablespoon|
|Frozen chopped onion||1⁄4 Cup (4 tbs)|
|Ground black pepper||To Taste|
|Shredded cheddar cheese||1 Cup (16 tbs)|
1. Place rack in upper third of oven and heat oven to 500°F. Line a baking sheet with foil.
2. Rinse cauliflower; do not pat dry. Transfer florets to prepared pan; drizzle with oil, add onion and 1/8 teaspoon each salt and pepper. Toss well, then spread in an even layer.
3. Roast in oven until tender and beginning to brown, 10 to 15 minutes. To serve, sprinkle cheese on hot cauliflower and transfer to a bowl.
