Cauliflower A La Grecque

Ingredients
  Thyme sprigs/2 level teaspoons dried thyme 2 Large
  Dry white wine 3⁄4 Pint
  Olive oil 3⁄4 Pint
  Lemon juice 1⁄8 Pint
  Bay leaf 1
  Salt 1 Teaspoon (Leveled)
  Peppercorns 2 Teaspoon (Leveled), crushed
  Coriander seeds 1 Teaspoon (Leveled), crushed
  Cauliflower 1 Pound, broken
  Parsley 1 Teaspoon (Leveled), chopped
Directions

MAKING
1) Take a saucepan and bring a mixture of wine, oil, lemon, herbs and spices to a boil in it.
2) Add in cauliflower sprigs and boil, covered for about 25 minutes, pouring in enough wine to prevent the liquid from reduced too much.
3) Let cool and refrigerate in a covered dish.

SERVING
4) Garnish with parsley and serve cold.

TIPS
Tie dried thyme in a small piece of muslin, if used in place of fresh one.
